The combination of Renaissance polyphony and plainchant is difficult to beat in a liturgical context, though Mozart's Mass settings are also excellent.

So many to choose from but Bach and Elgar would be at the top of the list followed by plainchant and hymns. Also love Rachmaninov Vespers and Faure Requiem!
